Ah so today, today was just ONE OF THOSE DAYS.

Those days where you see a cute little dog waggling its tail at you on the street and instead of going to pet its little fluffy head with a smile you fantasize about drop kicking it over the wall. Ha, not really (but, actually yes, at little bit really) so when I got home I did what any semi neurotic foodie trying to resist a bottle of wine would do and made soup.  I’ve already wrote before about the calming effect soup has on me, both in making and consuming it, but I feel the need to remind y’all again.

I got this recipe from Nigel Slaters cook book Appetite,, the great thing about this book is it’s sort of an anti-recipe cookbook. giving inspiration rather then regimented recipes, with loads of suggestions to tweek and change the recipe to your mood. And my mood was murderous.

So thanks Nigel, with your soup you have saved my sanity, my liver and a dogs arse today..

Spicy Chicken Noodle Soup

Warm up enough chicken stock (the better the stock, the better the soup, the better you’ll feel) for yourself in a saucepan, two bowls did me grand.

Add in some shredded cooked chicken and noodles, I used vermicelli noodles which you can throw in the stock and they’ll cook in 3 minutes

Tear up some spinach/Swiss chard/oriental greens and add them in

Add 1 tablespoon each of Fish sauce and Dark soya sauce and as much Sriracha sauce (or any hot sauce equivalent) as you want

Finish with a squeeze of lemon and some chopped coriander

Serve and devour
